假如電郵做左「線上封存」，係咪即係有日比人炒左，扑左我個 exchange 賬號，我都 access 唔到封存左既舊電郵？

Yes. In fact, you should archive your email to a local folder that can be copied away....
Or, if you have another email account that supports IMAP, you may "add" that account to your outlook and copy your corporate email to the IMAP account as a backup.
